Established in 1824, the distillery carefully built its reputation for luxury through the masterful use of sherry casks in the maturation of their expressions. Sourced from Jerez in Spain, these barrels have for decades been the only casks used in the production before the distillery expanded their options including the more traditional ex-bourbon barrels as well as a few others giving them even more versatility to create a host of new, more complex expressions that showcase their unique approach to single malt Scotch.
Launched in 2016, the Macallan 12-Year Double Cask is one of this new breed of whiskies utilizing two types of sherry casks to create its rich and fairly sweet character. Each batch of this Scotch begins with 100% malted Scottish barley which is fermented and then twice-distilled with the resulting spirit spending its maturation in a combination of American and European casks. After 12 years of aging, the finished whiskies are then married before finally being brought to proof, bottled, and labeled.
Bright sunny gold in color, each sip of this Scotch imparts a generous of butterscotch aromas supported by notes of candied orange, toffee apple, vanilla custard, and fresh oak. This is then complimented on the palate by honeyed notes of raisins, citrus, caramel, and wood spices before neatly coming together into a warm, sweet, and lingering finish accented by hints of oak.
